Smoothies make a great breakfast. They are highly nutritious, its quick and easy and can be made "to go"! 5-Minute Vegan Breakfast Smoothie Serves 1 1 cup almond milk 1 ripe banana, sliced 1 cup frozen fruit medley (favorite: strawberry, mango, pineapple, papaya) 1 tablespoon coconut oil 1-2 tablespoons chia seeds 1 teaspoon powdered ginger Combine the almond milk, banana, frozen fruit, coconut oil, chia seeds, and powdered ginger in a blender and purée until smooth. Pour into a glass and serve immediately. Recipe Notes If you have fresh ginger on hand, substitute the powdered with a half teaspoon of grated ginger root.
